Fillets of fish a la creme (the student way)
Tonight I am making this dish for dinner, using salmon, although the dish is more typically served with more firm fleshed fish.
Ingredients:
small onion
700g of fish fillet
2/3 cup of dry white wine
2/3 cup of water
1 tbsp butter
2 tbsp flour
2/3 cup whipping cream
few purple grapes
squeeze of lemon juice
1/4 cup of finely grated Parmesan
Put the dish into the handy steamer :-) (if you don’t have one, get one)
gently heat the onion in a saucepan with the butter
when it starts to go a little creamy, add the water and white wine
boil this violently until reduced to about 1/4 of a pint
now remove from the heat and add flour
when smooth add the cream slowly whilst returning to boil
add milk if too thick
add lemon juice to taste and halves grapes (seedless)
when cooked add the fish and sauce to an oven proof dish
sprinkle Parmesan and grill for 2 to 3 minutes
It was mmm good.
